Sweet and Simple: living well and a creamy treat

October 12, 2016, written by katie

Why does simplicity seem impossible? Overflowing schedules, complicated relationships, raising kids in our corrupt culture and trying to juggle too many tasks at one time. All things I struggle with! Anyone else maneuvering through to do lists with items still lingering undone at the end of each day? Somehow it feels like the list lengthens as days shorten.

Grain-Free Chocolate Cake with Dark Chocolate Glaze...and my food attitude

May 23, 2016, written by katie

Personally, I believe God gave us food to bless us and to, well, indulge and even entertain us! That’s why I find our discrete cultural attitudes about food devastatingly intriguing. The phenomonon that we feel guilt over even small food slip-ups and expereince self-loathing when seeking satisfaction from food is quite paradoxical to me. It's also directly contrary to my belief about this body-nourishing blessing meant to indulge and entertain us.

Grain Free Banana Cake with Peanut Butter Frosting

March 14, 2016, written by katie

Have you ever wondered why certain things just go together?  Why do sweet and salty combinations complement one another? What made that first person smother peanut butter sprinkled with chocolate chips on top of a stalk of healthy celery? What about dousing sweet, thirst quenching watermelon with salt or wrapping perfectly fermented pickles in a fat-dripping strip of bacon? It’s all so mouth-wateringly unexpected and GOOD!

Sweet Potato & Avocado Brownies

May 18, 2015, written by katie

Sweet potato and avocado come together in this mildly sweet, dark chocolate brownie recipe that my girls call, ‘Mom’s famous brownies’! Along with the raw cocoa, these ingredients give this grain-free indulgence lotsa fiber, vitamin A, potassium, magnesium, mono-saturated (good) fats and flavonoids. Guilt-free brownie? I AM IN!

Strawberry Cheesecake Filled Dark Chocolate Cups

February 5, 2015, written by katie

I don't often combine my chocolate with fruit. But something about strawberries with an added 'cheesecake' twist sounded curiously decadent to me!

So, as I was making these Salted Caramel Dark Chocolates, I decided to melt more chocolate and use the strawberries I had in the fridge to create something even more sweet. I'm not sure if I just wanted to spend more time with my warm, melted chocolate or if I actually felt creative in the kitchen! But, either way, turns out, it was a good idea!
