Change the World With Chickpeas: a Simple, Savory Snack

March 13, 2015, written by katie

Sometimes we simply need to get started. We need to stop waiting to try something new, stop enduring the current state of things and stop accepting the ‘norm’ as the non-negotiable way.

We simply need to start something new, change the norm and set new standards, even if just one small step at a time. After all, the world will never change if we don’t even start! If we don’t begin in our own hearts and homes, how will we ever be able to believe that something bigger and better can happen?!

Dark Chocolate Nut Butter Bars...and how I'm choosy with my chocolate

February 3, 2015, written by katie

Chocolate. Love. Ohhhh…they just go together like coffee and cream or like pumpkin and pie or like sweet potatoes and a pad of real butter. Need I say more? Chocolate holds my heart’s hand and every time I come up with a new concoction, it has me smitten all over again!

I LOVE chocolate. I’ll be honest, I eat some every single day. I’m a dark chocolate girl so even a few small morsels taste like bittersweet, indulgent perfection.

Pumpkin Donuts (Grain-Free) with Dark Chocolate Glaze

January 22, 2015, written by katie

Most of us want to eat healthy…..right? (I assume if you’ve made your way here as a Member of Happily Whole, you do!)

But wanting something and DOING something are quite different things, aren’t they? I WANT to organize my office differently. I’ve been wanting that for what seems like two years! I WANT to repaint and decorate that small room upstairs and make it into a simply inspirational writing and devotion space for me.

Chocolate-Coconut Christmas Gift Granola

November 20, 2014, written by katie

Since I've decided to give this granola in adorable little jars as Christmas gifts (along with my homemade vanilla coconut sugar), I thought I'd share the recipe just especially for Members here, too! And, believe me, it is a gift...well, if you like chocolate, of course. And, who doesn't?!

It's my hands down favorite chocolate granola recipe, which is obvious for two reasons. One, I cannot keep my hands out of the canister. Two, I eat it after the girls go to bed so they don't ask me to share!

Is that bad? Naaaaa....a mama has to have her treats, too, right?

Pumpkin Hummus & a Healthy Lunch

October 29, 2014, written by katie

When things work out right the first time, it’s always a sweet surprise! So much in this life lingers on, requiring a healthy dose of delayed gratification. Nothing wrong with that, I suppose. It builds character and encourages creativity.

But every once in a while, don’t you hope for something to succeed without taking so much time and energy?

Chocolate, Chick Pea Mini-Cupcakes...and giving your heart away

October 24, 2014, written by katie

What piece of your heart will the world hear today?

Will it be a gift of expressed gratitude you're giving away?

Or maybe a kind, helping hand to someone who's gone astray?

You've got something to give. Even on days you feel like you’ve lost all your luster or week’s that have worn you weary, you possess priceless pieces of your heart that are meant to be given away.

Pumpkin Pie Smoothie

Traditional indulgences of the season truly add to autumn’s ambience. Spicy scents and flavors, cravings for comfort in fall foods and warm, cozy recipes to savor. I adore all of it, especially with my favorite wrap around my shoulders while I’m cuddled on the couch.

While I love all the indulgences of fall, the shorter days and my less active ways open the door to eating for all the wrong reasons.

Pumpkin Spice Muffins: Simple, Healthy & Gluten Free

I’m the first to admit that the occasional complicated kitchen concoction keeps me inspired. There’s just something about multiple steps ending in success that translates love from my heart to the plate of whoever I’m feeding. Weird, right?

I suppose…I’ve never claimed normalcy as part of my personality! Sure, I love the simple things in life and I truly try to maintain modesty in heart and home, with my little loves and in my faith life. Simple and pure provides peace!

Pumpkin Spice Granola

I might be a bit of a crunchy mom. I’m ‘all in’ when it comes to real foods and holistic ways. My love for little homemade concoctions keeps me excited! In the evening you might find me mixing up some body butter, Kombucha or a bakery recipe makeover. In the morning it’s all about moving and my yoga mat, but only after a little God-inspiration.

Even the soaps we use are my self-made creations of organic oils and astringents. Oh, and my current fall allergies? Those are remedied with what I eat and a neat little netty pot. Presto! No more popping pills!
